My family loves burgers of all types – the guys like beef burgers while the girls prefer turkey or chicken. I’m always looking for a new way to spice up the classic fare so my interest was piqued by a segment on the Today show that demonstrated some techniques for giving burgers an Asian flair.

Feast on Some Tasty Beef Tenderloin

Beef tenderloin is one of the best cuts of meat you can find (at least in my opinion) so I was interested in the Today show segment that made use of it. The chef seared the tenderloin in some olive oil with Poblano chilies and garlic stuffed inside of it. It was cool because he also demonstrated the proper technique for tying meat. Very useful!

Cook Up Some Delicious Greek Dishes

I really love Greek food and I try to make it for my family at least once a month. The Today show welcomed a Greek chef who shared some suggestions for making some truly delicious fare.
He threw some roasted red peppers, Feta cheese, garlic, pepperoncini peppers and some fresh herbs into a food processor and pulsed it a few times to blend the ingredients but keep some of the texture. He put it on a plate with grilled pita and it looked delicious!

Today Show’s Country Kitchen Delights

My grandmother is from the south and there are some signature dishes that I really enjoy. One of those meals is potatoes gratin. They made the classic dish on the Today show, but with some modern touches including roasted red pepper and dried red chili. It sounds like it could be a nice alternative to the traditional recipe.
They also made a Caesar salad and, instead of adding chicken, they made some catfish croutons to add to the lettuce. They actually looked really good but I’m allergic to fish so I can’t try this recipe.

Indulge in Some Buttermilk Fried Chicken

I try to eat a healthy, well-balanced diet but once in a while, I think it’s okay to indulge. Unfortunately, I tend to do most of my indulging in the winter months but that’s a different story for a different day.
On the Today show, they made some delicious-looking buttermilk friend chicken. I don’t eat fried chicken very often but there are times when I really crave it and I think that this recipe looks incredible because I really love the flavor that buttermilk adds to food.
Giada De Laurentiis Makes Tasty Chicken Meatballs

Celebrity chef, Giada De Laurentiis, made some delicious looking meatballs on the Today show with Kathie Lee Gifford and Hoda Kotb the other day and I definitely want to try to make these!
Giada’s ingredients list is pretty basic – bread crumbs, parsley, eggs, milk, ketchup, Romano cheese, salt & pepper and ground chicken. That’s it! They also looked easy to make. She used a melon baller to keep them uniform and to keep from having to get her hands dirty.
Lighten Up Your Pasta Dish

My family loves it when I make pasta and I’ll admit that I enjoy it too since it’s tasty and easy to make. Unfortunately, some of the dishes are a little rich but a segment on the Today show demonstrated some ways to lighten up these delicious meals.
Chicken sausage was sautéed with rabé, garlic and milk (instead of a heavy cream) to create a nice sauce which was served over whole wheat fettuccine. The dish was topped with thyme and Kalamata olives. That’s it!

Football season has begun and today, NHL hockey kicks off a new year so it’s a great time to learn how to make some game day snacks. Today show contributor, Giada De Laurentiis shared some of her easy-to-make recipes.
First, she made prosciutto and mozzarella pinwheels using pizza dough. It’s a little more effort than pouring some nachos in a bowl but it’s also a little healthier. I am going to have to admit something. I have never had an omelet. I know. It’s pretty shocking to most of my friends. Great Ways to Spice Up Your Chicken Dinner

I love chicken. I have the occasional red meat but poultry is definitely the staple meat in my house. Of course, it can get a tad boring so I was interested in the segment on the Today show that demonstrated some great suggestions for spicing up chicken recipes!
They prepared a very quick spicy chicken dinner that included chili powder, coriander, black pepper, cumin and cinnamon. The spices were mixed with olive oil to create a paste that was brushed over the chicken. So much easier than marinating!
