Try These Authentic Italian Dishes!

Almost everyone loves Italian food but many don’t know much about the fare beyond your typical pizza and spaghetti so it was great that the Today show demonstrated how to make some authentic Italian dishes.
One meal they prepared was cavetelli with eggs and bacon which looked like a mix between a carbonara and a frittata. For dessert, they made a bread parfait. The bread is socked in espresso coffee, chocolate and rum and is then layered in a dessert glass with whipped cream. It’s a great way to get rid of leftover bread. It was so quick and easy!
Lighten Up Your Pasta Dish

My family loves it when I make pasta and I’ll admit that I enjoy it too since it’s tasty and easy to make. Unfortunately, some of the dishes are a little rich but a segment on the Today show demonstrated some ways to lighten up these delicious meals.
Chicken sausage was sautéed with rabé, garlic and milk (instead of a heavy cream) to create a nice sauce which was served over whole wheat fettuccine. The dish was topped with thyme and Kalamata olives. That’s it!

Simple 30-Minute Pasta Dishes

The Today show took a quick look at some pasta dishes that are quick and easy to make. I love pasta because most of the ingredients can usually be found in the kitchen and it can be whipped together on those days when you’re just too tired to cook a big meal.
One thing they made was fusilli margherita which included the following ingredients: 2lbs of tomatoes, 3 Tbsp extra virgin olive oil, salt, 1lb fusilli noodles, 2-3 sprigs of oregano, 8oz of whole milk and mozzarella. It looked great and very simple to make.
