Almost everyone loves Italian food but many don’t know much about the fare beyond your typical pizza and spaghetti so it was great that the Today show demonstrated how to make some authentic Italian dishes.
One meal they prepared was cavetelli with eggs and bacon which looked like a mix between a carbonara and a frittata.   For dessert, they made a bread parfait.  The bread is socked in espresso coffee, chocolate and rum and is then layered in a dessert glass with whipped cream.  It’s a great way to get rid of leftover bread.  It was so quick and easy!

I love being adventurous in the kitchen and when I’m low on food, I have to get creative to feed my family of five.  Sometimes it comes out great and I’ve discovered a new meal to add to my repertoire and other times it’s a horrible disaster.

Try Chef Lidia’s Perfect Pasta With a Twist!

Lidia Bastianich stopped by the Today show where she talked with host, Al Roker and made bucatini with homemade bread crumbs.  I absolutely love pasta and I adore garlic so this recipe looks like something I would love (it looked like there was a little too much olive oil in there for me, though).  The recipe calls for oregano and, while Lidia explains that she prefers fresh herbs, oregano is the exception because the dried version is more intense.  I never noticed that!
