Homemade Ice Cream Sandwiches

I love ice cream sandwiches but I find that the ones you buy at the store get a little boring after a while since there isn’t a lot of variety in terms of what the cookie is made of and what flavor the ice cream is.  That’s why I love seeing segments like the one on the Today show since it was all about making your own at home.

Yes, I realize that it’s super simple but seeing this made me remember that I could just whip up a batch and the best part is that I can use low-fat ice cream or even frozen yogurt!  On the Today show they used chocolate chip cookies so I was drooling before they even added the ice cream!
